Black Rice Salad
Boil 1 cup black rice in 2-3 cups of water. Add chopped vegetables, herbs, ginger, turmeric, little lemon juice, 1 tbsp roasted mix seeds. Temper mustard seeds, cumin crushed peppers or curry leaves in little oil or ghee & mix with black rice. Serve.
How to Use
Soak black rice for 15 or more minutes. Cook in same water in normal pressure cooking with extra wistle.Tasty and Nutty, it can be eaten like regular rice with dal, curd or risotto, as a sweet, porridge, pancakes, dosa or noodles.

Ingredients:
- Black rice – 1 cup
- Urad Dal – half cup
- Cashew nuts – 5-10 (optional)
- Salt to taste
- Fenugreek Seeds – 1/4 teaspoon and or flax seeds ¼ tsp
- Oil for cooking Dosa – 1 teaspoon
How to Prepare Batter
Soak the black rice with little water for an hour and grind into a smooth paste. Add water to get the desired consistency. Or Add water to rice flour. This is instant batter.
Method
Wash and soak Rice, Fenugreek seeds, Urad dal for 2-3 hrs. Grind it with required water to smooth batter. Add Salt and mix well. Let it ferment, for 5 hours or overnight. Add salt to taste and make dosa or pancakes.
