How to use
As cereal or flour
Cereal – Roasted, Popped and mixed with honey, jaggery or milk.
Dessert – Popped amaranth is mixed with melted jaggery.
Flour – Traditionally Chappthies or pancakes of amaranth flour are eaten during fasting or convalescence or detox diets.

Recipe:

Amaranth (Rajgira) Cutlets:

Ingredients:

  • Amaranth seeds – 1 cup
  • Water- 2 cups
  • Vegetable oil- 1 Tbsp
  • Garlic- 1tbsp
  • Onion- ½ cup
  • Green peas – ½ cup
  • Mashed potatoes – ½ cup
  • Chilli powder- 1/4 Tbsp
  • Amchoor (dry mango) powder – 1tsp
  • Coriander powder- 1/2 tsp
  • Lemon zest- 1/2 tsp
  • Black pepper powder- 1tbsp
  • Vegetable oil – 2 tbsp
  • Amaranth flour for dusting – 2 tbsp
  • Salt – 1 tsp

How to make recipe:

1. Cooking the Amaranth Seeds
Boil 2 cups of water and add the amaranth stirring well. After a quick boil, cover the bowl, lower the heat and let it simmer for 20 minutes. When amaranth is cooked, season with sea salt and freshly ground pepper. Keep aside.

2. Preparation for Cutlets
Heat ½ tbsp oil and sauté all the vegetables on medium flame for 5 mins. Once cooked, add mashed potato, salt and spices. Mix well. Cool. Make small patties and coat both side of patties using amaranth flour. Pan fry them using 2 tbsp of oil till golden brown. Serve hot.
